Do you have 30 minutes or less to cook dinner? For many immediately after the bell rings at work, it is time to go home to job number 2! I know many of you can relate, as a matter of fact you are probably shaking your head thinking ?I know that?s right girlfriend?! Whether its football practice, dance rehearsal, piano lessons, t-ball, lacrosse or tutoring sessions, many of us are constantly on the run. But we have to eat right? We have to feed our children and our husband/wives right? Well I?ve got a super flavorful but simple, easy and quick Honey Butter Salmon, Corn & Broccoli recipe that will knock your child?s football cleats off! Talk about juicy salmon, sweet buttery corn and steamed to perfection broccoli ? BAM!
AFTER WORK AND RIGHT BEFORE FOOTBALL PRACTICE HONEY SALMON, FRIED CORN & BROCCOLI
INGREDIENTS FOR HONEY SALMON:
1-2 Slabs of Salmon Filet(s) (NOT salmon steaks)
4-6 tbsp. Extra Virgin Olive Oil
Old Bay or Seafood Seasoning (to taste)
Granulated Garlic (to taste)
Sea salt (to taste)
Ground black pepper (to taste)
Unsalted Butter (to taste)
Honey (to taste)
INGREDIENTS FOR FRIED CORN:
2 cans of corn or 4-6 corn on the cob
4-6 slithers of unsalted butter
1/3 cup of granulated sugar
2-4 tbsp. water
INGREDIENTS FOR STEAMED BROOCLI:
1 Bag of Frozen Broccoli Florets
1/3 cup of water
Unsalted butter (to taste)
Sea Salt (to taste)
READY, SET GO:
- Turn on Broiler to HIGH
- Line baking dish with aluminum foil
- Rinse your salmon slab(s)
- Pat salmon slab(s) dry with paper towel
- Rub salmon down on both sides with extra virgin olive oil
- Season salmon on both sides with old bay, granulated garlic, sea salt and ground black pepper
- Add extra virgin olive oil to baking dish and smear so it covers the entire baking dish
- Place the salmon slab(s) on the baking dish and place under broiler
- Allow salmon to cook for 15-20 minutes (until done ? do not overcook)
- Once salmon is done, remove from broiler (but do NOT turn the broiler off)
- Cut slithers of butter and place all over the salmon slab(s)
- Then drizzle honey all over the salmon slab(s)
- Place the salmon back under the broiler for 5-10 minutes (do not allow to burn, you only need the butter to melt and the honey to caramelize)
- Once the butter is melted and the honey is caramelized, take out of the oven and allow to rest for at least 5 minutes
- NOW LET?S MAKE THE FRIED CORN (start the corn while the salmon is under the broiler so all is done around the same time)!
- Open cans of corn and drain all liquid (if you are using corn on the cob, cut the corn kernels from the cob with a knife (be careful) and set aside
- Add 4-6 slithers of unsalted butter to a large skillet on the stove and turn the heat to medium to allow the butter to melt (but don?t let the butter burn)
- Once butter is melted add the corn to the skillet
- Allow corn to fry for 5-10 minutes
- After corn has been frying 5-10 minutes, add the 2-4 tbsp. of water and granulated sugar and stir to incorporate
- Allow corn to fry another 5-10 minutes
- LET?S MAKE THE STEAMED BROCCOLI (start the broccoli while the salmon is under the broiler so all is done around the same time)
- Add frozen broccoli to a Pampered Chef Vegetable Steamer or medium pot with a cover
- Add 1/3 cup of water to broccoli
- If you are using the Pampered Chef Vegetable Steamer cover and place in microwave for 8 minutes or until broccoli is tender ? if you are using a medium pot with cover, put on stove and turn heat to medium/high cover but lift the cover just a little so a very small amount of steam can come out and cook for 10 minutes or until broccoli is tender
- After broccoli is done, drain and add unsalted butter and sea salt to taste
- SERVE, ENJOY, AND GET TO PRACTICE ON TIME!!!
